Light exercise had no effect upon dressing percentage, but heavy exercise increased the dressing percentage by reducing the amount of fill.
Exercise had no effect upon the development of any organs. Altho the weight of the liver increased with the amount of exercise, this increase was probably caused by the higher protein consumption.
As indicated by carcass grade, physical composition of cuts, cutting percentages, and color of lean, exercise had no effect upon the quality of beef. The fact that the color of the lean is not affected by exercise is verified by the conclusions of Mitchell and Hamilton that there were no significant differences in the hemoglobin and iron content of the blood or tissues of the exercised and unexercised steers.
