Divided into three sections, the book examines phytochemicals as a whole and their relationship to human health; it introduces the concept of nutrition and metabolomics, including the concept of regulated phytochemical intake and metabolomics; and introduces ways in which phytochemicals can be used in the food industry and how the industry can take commercial advantage of phytochemicals. Both fresh foods and processed foods will be covered.
