Die eiweissartigen Stoffe bestehen aus Kohlenstoff, Wasserstoff, Stickstoff und Sauerstoff, in annähernd ziemlich gleichen Gewichts verhältnissen, ausserdem enthalten sie noch Schwefel, manche auch Phosphor und gewisse anorganische Salze, namentlich phos'phor sauren Kalk. In der Asche des Caseins ist die Menge dieses Salzes am bedeutendsten, was physiologisch desshalb interessant erscheint, da der phosphorsaure Kalk mit Knochenerde identisch ist. Die so rasch fortschreitende Ossification im Säuglingsalter, wird da her 'wohl mit Recht in nahe Beziehung mit dem grossen Gehalte des Caseins, als Hauptbestandtheils der Milch, an phosphorsaurem Kalk gebracht.
