The estimates of food values, their classifications, and their physiologic uses, are accurate and just; and the practical, scientific directions given cannot be too highly com-mended.
The rules for selecting, preparing, and preserving, foods, are plain, and within the ready comprehension of the average pupil; and are conducive of the best practical and economic results.
The vast amount of labor involved in the preparation of this text for the elementary field, bears testimony to wide research, discriminating judgment, and a deep knowledge of the needs of the pupil, from the civic, domestic, and pedagogic viewpoints.
