Excerpt from Composition of Commercial Grades of Corn, Oats, and Grain Sorghums
Composite samples of grades 1 through 5 and sample grade of yellow corn were obtained from primary grain markets for all crop years from 1941 through 1954, except 1942 and 1945, and were analyzed for ash, protein, oil, sugar, and starch contents. There were no significant differences between grades in ash, protein, and starch contents. The better grades were slightly but significantly higher in sugar content than the poorer grades and were also slightly, but significantly, higher in oil.
