Publisher's Synopsis
By nature, our bodies were created/evolved in balance and in harmony with its surroundings. Our job is to get and keep them that way. When it comes to what we eat, it is not just the type of food that influences the balance but how we combine it with others and prepare it. A vital area of balance is between acid and alkaline. According to many nutritionists, well over 50 percent of our diet should be alkaline-forming. However, much of our modern Western fast-food diet is largely acid forming. Note that there is a difference between acidic food and acid-forming food. For instance a lemon is acidic, but is alkaline-forming in the body. This subject is covered extensively in the book Acid and Alkaline by Herman Aihara (George Ohsawa Macrobiotic Foundation, Oroville, CA, 1986). He is an authority on the macrobiotic diet which is an excellent study for anyone desiring a wholesome lifestyle. It does not just cover food, but how to maintain a healthy balance in all aspects of our life.
