A complete Final Fantasy 7 (VII) Guide is available here, along with a Missions List that includes all Side Quests. There are 18 main chapters and 26 side missions in Part 1 of Final Fantasy 7 Remake (Odd Jobs). The locations of major treasures in each level are also highlighted in this Final Fantasy 7 (VII) Remake Walkthrough. The Best in the Business award is unlocked by completing all 26 Side Quests. For the trophy in Chapter 9, you can only complete three of the five side tasks in a single playing. The remaining two must be completed via chapter pick. You won't be able to complete all of the Side Quests in a single playthrough. Chapter choose, which opens after beating the game for the first time on any platform, allows you to complete any tasks you may have missed.
