Have you ever looked at recipes in cookbooks or on websites and wondered why they have to be so complicated? I know I have. Sometimes I wonder whatever happened to the kind of simple meals my grandma used to make, with very few ingredients, and none that weren't available in just about any supermarket. Her best dishes were easy to create, nutritious, and fun - even at a very young age, I loved helping Grandma in the kitchen!
Is simple, easy cooking a thing of the past, overtaken and shoved aside by over-ambitious recipes that call for ingredients most of us can't even pronounce? I don't think so! On the contrary, it's easier than it's ever been because today we have access to things my grandma could only have dreamed of. She wouldn't even have imagined, for example, frozen biscuit dough, bottled salsa, ready-made tortellini, bagged salad greens ... well, I could go on and on! My point is that recipes that would once have required multiple ingredients (imagine making salsa from scratch, for instance) are now beyond easy because all the hard work is done for us. We can cook with literally three ingredients, thanks to the availability of commercially prepared food items. We'll use these items and more as we explore ways of creating delicious recipes with just three ingredients. Now I'm sure you're saying to yourself, "Isn't processed food bad for me?" Well, sometimes it is. Other times not. Just as an example, nobody is ever going to tell you that a commercially made sweet pastry that can sit on a shelf for six months without going moldy is good for you. On the other hand, commercially prepared dill pickles, although high in sodium, won't do you much harm because you're not likely to eat the entire contents of the jar. In this book we'll use processed foods from time to time, but never to excess. The goal here is to make delicious food quickly and easily, with just a few ingredients, and have fun doing it.
