Over a century ago, on January 6, 1912, New Mexico became the 47th US state.
Every year, the state nicknamed, the Land of Enchantment celebrates this day.
And New Mexico really is an enchanted place. From amazing sunsets to breathtaking scenery to diverse local cuisine, New Mexico has it all.
Typical New Mexican cuisine can be characterized as anything created with the state's famous green or red chiles.
We're not talking a little dash of chile here either - but a lot.
And it is this that makes each dish, modern or traditional different from the rest of Southwestern cuisine.
What's more, New Mexico's state vegetable is addictive. Whether it's super hot or mellow you are sure to be hooked by the variety of flavors and tastes in every dish and - not just for the burn!
You will grow to love chile spiced recipes, including smothered breakfast burritos, sweet potato soup, seared chile salmon with sweet pineapple pear salsa and hot apple pies.
Some like it hot. For those of you who enjoy taking things a little bit cooler though, why not finish a spicy main with sweet, chile free peach cinnamon enchiladas or enjoy our honey drizzled, classic sopaipillas.
