Because his guests were COWpokes, they also wanted to eat a lot of beef. And they wanted to eat that Mexican food right next to their Southern mama's cooking. So, they liked to eat pork and beans with a tortilla and put jalapeño peppers in the cornbread. Heck, they wanted to put jalapeño peppers in everything. And both the cowboys and the Mexican Americans thought they had the right to make up new foods as they went along: things like tortilla chips, mango salsa, and ham with red-eye gravy. The special ingredient that Pecos Bill brought to the table was a big Texas-sized helping of laughter. Around his table, guacamole and salsa were happy foods.
